Hello fuel666,
You can find ransomware protection related settings on Policy Manager Console > Settings (Standard view) > DataGuard tab. Start from checking the "Turn on DataGuard protection" check box, and then tune all the rest settings on this tab according to your needs.

From what I understand save only some files in some directories (videos, desktop ect.)
but the PC is still compromised

Yes, you can. But in this case turning on Restricted access is not recommended.

I see now. You can exclude a folder in PMC Settings (Advanced view) > F-Secure DeeDuard > Settings > Excluded applications policy. It accepts folders as well.
